Comfort for Wintertime Blues


Sure, the snow was pretty…the first time. It was even quite magical during the second record-breaking storm of the season. But when a third storm — a blizzard no less — let loose in our area, I was no longer enchanted. I mean, Virginia isn't supposed to have weather like that!

Well, the good news is that at long last, the snow and ice are finally melting, although not without first bringing our rain gutters down with them.

The only comfort has been to keep on cooking, mostly making hearty soups, bread, and desserts. Anything that spells c-o-m-f-o-r-t. Here are a couple examples -- some quick herb bread and vegetable soup followed by a stack of peanut butter cookies. Can Spring be far behind?

Hi Kristin,

I know what you mean about the Peanut Butter Cookies -- looking at the photo makes me want to bake some more! I adapted that recipe from the PB cookie recipe in 1000 Vegan Recipes. Basically, I added some maple syrup for a richer flavor and pinched, rolled, and pressed the cookies instead of rolling them out and cutting with cookie cutters for a more traditional (and quicker) cookie(although they're good both ways). Here's the recipe with my tweaks:
Peanut Butter Cookies
(adapted from 1000 Vegan Recipes by Robin Robertson).
3/4 cup peanut butter
1/2 cup vegan margarine
1/2 cup sugar
1/3 cup maple syrup
3 tablespoons water
1 teaspoon pure vanilla extract
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
In a bowl, combine the peanut butter, margarine, sugar, maple syrup, water, and vanilla and mix well until blended.
Add the flour, baking powder, and salt, and stir well to form a smooth dough. Cover and chill until firm, about 1 hour.
Preheat the oven to 350° F. Pinch off small pieces of the dough and roll them into balls. Transfer the cookies to ungreased cookie sheets and press down with the tines of a fork to flatten slightly. Bake until lightly browned at the edges, 10 to12 minutes. Cool slightly before transferring to a rack to cool completely.
 
Thanks Robin. I was wondering if it was the 1000 Vegan Recipes recipe and when I looked at it, I saw they were rolled. Thanks for typing up the changes. I'll be making those this weekend!
