Wrapping the roast in cheesecloth really does a great job in giving the roast a nice shape and keeping the veggies from embedding themselves in it. I do that sometimes, too. To pre-season the seitan, just add the seasonings to the seitan mixture BEFORE you mix it - add dried spices to the dry mixture and liquid seasonings (soy sauce, etc.) to the wet mixture. ALso, I often mix my seitan in the food processor and it works great! Although ...I really like making your seitan roast. Although it's been a learning experience. The first time I made it, I put the veggies on top, and ended up with veggies embedded in the seitan. The last time I made it, I wrapped the roast in cheesecloth, which was great because there were no embedded veggies, and the texture was firmer. <br /><br />My only "problem" has been seasoning. I make the seitan from scratch, from the recipe in the same book. Which I don't think is all that much work.
