At the risk of sounding like I have a...Hi Lyndsay, <br />At the risk of sounding like I have a one-track mind: ROASTING is also my favorite way to enjoy delicata squash!:) To do so, cut the squash in half lengthwise, remove the seeds and cut the halves into 1/2-inch slices (like crescent moons). Arrange them in on a baking pan as described in this post. Roast at 425 (to get more caramelization) for about 15 minutes, then use a metal spatula to turn them over.
