Another Monday, Another Winner -- and a New Giveaway

How better to brighten a Monday than with a new cookbook giveaway!  But first, it’s time to announce the winner of last week’s giveaway.  The winner (chosen randomly via of a copy of Vegan Fire and Spice: 200 Sultry and Savory Global Recipes is: #15 – Celyn.  Congratulations, Celyn! Please e-mail me with your mailing address and I’ll get the book right out to you.

And now for a new “Make My Monday” giveaway. This week’s prize is a copy of Vegan Unplugged: A Pantry Cuisine Cookbook and Survival Guide.  My husband Jon write the survival guide section (a must-have for whenever the power goes out -- we lived through a few hurricanes, so I know) and I wrote the 80 recipes, all of which can be made using only pantry ingredients and can be ready in less than 15 minutes.  The best part of these recipes is their versatility: if you have fresh or frozen ingredients, you can use them, but if you only have canned or dehydrated ingredients, these recipes can be invaluable. 

Many of these recipes, such as the Samosadillas shown above, as well as the Almost-Instant Black Bean Chili and Puttanesca in a Pinch are regulars in my house.  Here’s another favorite — Moroccan-Spiced Vegetable Stew:

These recipes are quick, easy, and delicious.  What more could one ask for, except maybe these no-bake Ginger Rum Balls:

That sounds like a neat cookbook. My favourite pantry ingredient are dried beans and canned beans, in a pinch. Most of my beans revolve around them!
(canned tomatoes is also a must-have pantry item)

Favorite pantry ingredient: canned diced tomatoes- use them in so many things- casseroles, stews, sauces...
I have to go with beans as well. Pinto, Garbanzo and Cannellini especially.
Oh man, so many choices. Perhaps dried fruit, like cherries.
Chickpeas, dried but also canned.

Chickpeas! I made your vegetable soup with quinoa yesterday and used crushed fire roasted tomatoes instead of diced (i picked up the wrong thing at the grocery store) and it still turned out great!
My Favorite Pantry Ingredient is Chickpeas!! I go through several cans a week! If electricity goes out, all I need are the ingredients to make hummus and hope that there are some pita chips in the closet, and I'll be happy and satisfied for days!
My favorite pantry ingredient is the vegetable stock concentrate from Trader Joe's that comes in little packets. I'd love to win this book!

that was a difficult question but I would have to say canned tomatoes. My canned/dried beans almost won since I put them with the tomatoes in so many dishes.

I WAS going to say chickpeas, but that's been taken by everyone. So...I'll go with canned diced tomatoes. Perfect for making home made salsa (for some odd reason I can't cut them to be the perfect salsa consistency), making baigan bharta, or channa masala. Also useful for practically every single dish I make =)

My favourite beans: scarlet runner beans (in German they're called Käferbohnen, which translates to "beetle beans").
Also nutritional yeast - it gives a good flavor to any dish.

Canned beans are my most used pantry ingredient, but seaweed is my favorite. I use it for broths, seasoning, salads, all sorts of stuff. It's great to have around.

hmm... I think buckwheat soba noodles. Whenever I run out of food I always seem to be able to find enough odds and ends to make some yummy soba noodle soup!

Quinoa - it's a great base for any vegetable.

Our favorite item in the pantry is Nutella. We go through the family size so quickly, however the family size Nutella jar holds a bag of dried beans so we upcycle them as containers. I probably shouldn't admit publicly how much Nutella we eat. we also have canned beans in stock. :)

Oh, what a tough question! I guess if I can only pick one, it will be kalamata olives. I always have a jar on hand and I've added them to just about everything!!! I added some to the 'Sundried Tomato & Spinach Quesadillas' from Robin's 'Quick Fix Vegetarian' cookbook along with a touch of garlic powder. I serve them with guacamole for dipping. My husband says these are his favorite quesadillas ever....and he's an omnivore. Pantry ingredients promote creativity in the kitchen!!! ---Tara

Since I've become vegan I keep nutritional yeast in my pantry, always. It adds some cheesy flavor to those things that need it!! Thanks!!
This sounds like a handy cookbook for my wife and I. My favorite pantry ingredient at the moment is actually nutritional yeast: it's amazing what all can be done with it.

I LOVE pinto beans. A simple ingredient yes, but something that I love to add to all those dishes that just get thrown together using whatever ingredients I have on hand.

doh! Nutella is not vegan. my favorite vegan pantry staple would either be King Arthur whole wheat flour or tetrapaks of almond milk.....can't give up Nutella so I hope everyone forgives me for that.
Beans. Definitely. I always keep at least one emergency can around. That and peanut butter.
My favorite pantry ingredient is TVP. This stuff is cheap, lightweight so it can go on any trip, camping, backpacking and it comes in a number of forms like chunk and ground. It also is the basis for Butler soy curls. I love that I can have ground "beef" or Chicken" or chunks for stew or pot pie in minutes on a hard day with no defrosting, no taking up fridge or freezer space. It is the greatest ting since sliced bread!
My favorite is coconut milk. I always have it around, and its great to throw a little any any indian or thai dish (I LOVE coconut).
Beans and quinoa. I know, that is two not one! But I love them.
My favorite is definately olive oil, which I use practically every day.
