In addition to being great for all the reasons you mention, it's also much more economical than buying sun-dried tomatoes at the store and, like most things, the homemade kind taste much better!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-8947277095635982390.post-76321516477759360552008-09-04T01:12:00.000-04:002008-09-04T01:12:00.000-04:00I made a raw tomato sauce with sundried tomatoes, ...I made a raw tomato sauce with sundried tomatoes, a fresh tomato, garlic, basil, olive oil and a bit of water on Friday - it was truly a revelation.

I've decided that I'll be drying most of my tomatoes from my garden instead of cooking them down into sauce and paste -- it will preserve more nutrients and be less time/energy/resource intensive (no jars!).

Try drying some of your tomatoes! :)Jennhttps://www.blogger.com/profile/16304420774638468362noreply@blogger.comtag:blogger.com,1999:blog-8947277095635982390.post-19283099336344459472008-09-01T09:34:00.000-04:002008-09-01T09:34:00.000-04:00Yes, you can make a decent sauce out of yellow tom...Yes, you can make a decent sauce out of yellow tomatoes although it will be different from a red sauce, lighter and less acidic in taste.
I prefer using yellow tomatoes to make a quick and easy stovetop sauce (rather than a baked sauce). Just saute some garlic in olive oil until fragrant. Add lots of diced yellow tomatoes, some basil and/or parsley, salt and pepper and simmer about 10 or 15 minutes to blend the flavors.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-8947277095635982390.post-38473328199479825992008-08-31T23:26:00.000-04:002008-08-31T23:26:00.000-04:00This sounds divine! Tell me, can you make a decent sauce out of yellow tomatoes (which is what's growing in my garden), or is red preferrable?Anonymousnoreply@blogger.com
