The mint pesto really is great...Thanks, Savorique. The mint pesto really is great -- I hope you enjoy it. I used unsalted roasted cashews when I made it, simply because that's what I had on hand. I should think it would work with whatever kind of nuts you have -- roasted or not -- I just think something mellow like cashews or macadamias would work best complement the mint.
