Best Ever Bahn Mi


My favorite sandwich in the world is the Vietnamese bahn mi. Each time I make these sandwiches, I tweak the ingredients just a little, sometimes adding shredded carrot or onion, other times just cucumber and lettuce — always lots of cilantro. I usually make them either with seitan or soy-tan dream cutlets (from 1000 Vegan Recipes), although I’ve also added thin slices of marinated extra-firm tofu on occasion.

The version I made for lunch yesterday was the best I’ve ever had. Here’s how I made them: I sautéed slices of seitan with some hoisin sauce and a little soy sauce which gave the seitan a wonderful flavor. I combined Vegenaise and sriracha sauce and spread it onto split rolls. Then I layered the rolls with lettuce, sliced cucumber, the hoisin-flavored seitan, loads of cilantro, and a generous sprinkling of chopped jalapeño. The combination of flavors and textures was out-of-this-world fabulous. I think it was the addition of hoisin to the seitan that put the flavor over the top. And of course, the sriracha mayo only made it even better. If you’re a fan of bahn mi, give this a try and let me know what you think.

Vietnamese food has the best flavors! I've always been intrigued by banh mi when I'm in vietnamese restaurants, but have never come across a vegan version. Just printed this out and will definitely give it a try!
 
This looks great! I'm always looking for easy ways to sauce up my seitan, and I've always wanted to try a bahn mi, so this is perfect.
 
Sounds like a very tasty sandwich! I never would have thought of using hoisin sauce in the same recipe as vegenaise.
 
Vegan Deluxe: I've tried vegan versions in Vietnamese restaurants but they didn't have as much flavor as this one. I hope you like it.
Raphlieb: This is a terrific way to use leftover seitan because you only need a couple thin slices for each sandwich.
Janet: The hoisin absorbs right into the seitan to give it an incredible flavor. Blending some sriracha into the veganaise transforms the mayo into a spicy spread that delivers the perfect amount of heat.
 
That looks delicious! Tell me, where do you find bread like that? My local stores don't seem to carry it, so I might have to go to a bakery, but what do I ask for?
 
Blessed Mama: The bread typically used is a French baguette -- you can usually get 4 to 5 good-sided sandwiches out of a long baguette. Some supermarkets sell mini-baguettes which is great for two sandwiches. The bread that I used for the sandwiches in the photo were called "club rolls" at my local supermarket -- they're smaller than sub rolls and have a texture similar to a baguette, but slightly less chewy. They worked great. I think most supermarkets carry similar breads in their own bakery department (which is where I found these).
 
OOPS -- I meant to type "4 to 5 good SIZED sandwiches" not "good SIDED" -- sorry about that!
 
Thanks, Robin. I wondered what a "sided" sandwich was until I saw your message underneath. :) I guess I thought baguettes were more narrow than that, but I will keep my eyes open. And, by the way, that sandwich looks like it hits the spot. Thanks for the post.
 
Hi Blessed Mama -- you're right, regular baguettes are more narrow than those club rolls I used. I think any decent rolls you can get (kaiser, etc.) would be good for this sandwich. Let me know what you think after you try them!
 
I love, love, love bahn mi sandwiches! Fortunately I live in Seattle where many cafes make a vegan version - I too make them at home now with tofu, but I will def have to try your recipe with the seitan. Thanks for sharing!
 
We usually get the veg kind with the fried taro root and some sort of noodle. They're really good, but best part for me is the pickled daikon radishes -SO GOOD!
 
I made this Bahn Mi for me and my husband using the seitan from Vegan Planet. These were so good! I made homemade French Baguettes, carrot slaw (no daikon, did not have it), tomatoes, lettuce, cucumbers, mayo and Sriracha. I will definitely make this again, thanks for sharing :)
