Vegan on the Cheap — Tester Photos #1


Over the next several weeks, in addition to sharing a few recipes from my new book, Vegan on the Cheap, I thought it would be fun to spotlight some recipe photos taken by the recipe testers themselves. First up are a few pics taken by Andrea of Vegancognito. The top photo is Fusilli with Potatoes, Green Beans and Lemon Basil Crème (page 119). When Andrea tested this delicious, creamy (and lemony) dish she noted that it “tastes sophisticated yet comforting at the same time.”

And finally, the next one is Savory Vegetable Cobbler (complete with a biscuit topping):

Just got your new book today and the hardest thing is not what to make but what to make first! Thanks so much for another great cookbook. I even bought another copy for my carnivore sister who is slowly eating more vegan due to recipes from your cookbooks. Keep up the good work. Off to cook!
 
Looks delicious, I can't wait to get a copy. Do you have instructions on how to make seitan in any of your books? It is one ingredient I love but is not easy to find in a regular southern grocery store.

If you need another tester the next time around, please let me know! I'd be happy to try things out.

Hi Jenny. Yes, there are several seitan recipes in this book: Simple Simmered Seitan; Baked Seitan Loaf; and Cutlets on the Cheap. There are also recipes for sausage patties and links, pepperoni, and also "wheatballs." All of them easy to make and much cheaper them buying them at the store. And thanks for your offer to test recipes next time!
