I plan to serve the slaw with the Smoky Joes from my book, Vegan on the Cheap. (I’ll do a separate post about that recipe soon). Both the slaw and the “Joes” are loaded with flavor, easy to make, and can be make ahead, giving me a special kind of Independence Day — independence from spending all day in the kitchen!

Watermelon is my favorite summer food. We wait all year for watermelon season. They are so good.

ReplyDeleteAnything with pesto. My CSA has all you can eat basil most weeks so I make pesto in huge quantities and put it on everything.

ReplyDeleteFavorite summer foods, hands down: sun-warmed, homegrown cherry tomatoes, basil, and sweet corn -- tossed together with a little olive oil and vinegar, or just eaten straight from the garden. It's like eating sunshine.

ReplyDeleteHomegrown Sungold cherry tomatoes, roasted in a foil packet on the grill until the sugars start to carmelize. Once roasted, while they're hot, I smoosh them on top of a warm veggie burger in place of ketchup--sooooo good!

Tomatoes warm from the sun. they seem to be a favourite of a lot of people. a close second would be corn on the cob but I could eat the tomatoes at every meal and I often eat one as a snack.

ReplyDeleteHonesty - just one? I love summer for the bountiful produce we get in this area. Scrolling down to the end of the comments just provoked comments like: "Oooh - I need to make my gazpacho for tomorrow!" or "Time to break out the grill for corn on the cob - with fresh, homemade pesto." Add a nice side of fruit salad, and I'd be good to go! We're also blessed to have wonderful farmer's markets in the area.

ReplyDeleteI make a cold, vegan pasta salad in the summer that is full of flavor, and full of healthy carbs, too. With whole grain, or gluten free pasta, sesame oil, rice vinegar, shredded scallions, salt & pepper and two kinds of sesame seeds! It travels to pot lucks well, the flavors are intense, and my vegan friends can eat it without worry! Yum, go my vegan friends!
