"Independence Day" and a Book Contest!


The 4th of July is an American tradition, so what better way to celebrate than by preparing something delicious from American Vegan Kitchen by Tami Noyes? It will be a busy weekend and I don’t want to spend the holiday weekend cooking. I want to make something quick and easy that everyone will love. The Mustard Mac Slaw from American Vegan Kitchen is just the thing. It’s a favorite in our house — we can’t seem to get enough of the slaw’s tangy mustard dressing. As you can see in the photo, it’s a pretty salad, too, and ideal for summer meals. Leftovers taste great too — (on those rare occasions when there are any!)

I plan to serve the slaw with the Smoky Joes from my book, Vegan on the Cheap. (I’ll do a separate post about that recipe soon). Both the slaw and the “Joes” are loaded with flavor, easy to make, and can be make ahead, giving me a special kind of Independence Day — independence from spending all day in the kitchen!

Watermelon is my favorite summer food. We wait all year for watermelon season. They are so good.
 
Gazpacho! A nice cold soup on a hot summer's day is perfect. I never make it any other time of year.

Anything with pesto. My CSA has all you can eat basil most weeks so I make pesto in huge quantities and put it on everything.
 
BBQ (tangy bbq sauce) tofu with slaw.
 
Anything fresh and amazing at the farmers market. beets and cherries recently. actually, anything fresh and amazing from my garden... but now that is mostly fresh herbs.
 
Anything with blueberries...

i love any kind of berries or melons. or apples ... or peaches ... just all the fruit that is so much better in the summer time!

I would love to enter yor book contest. i just got my copy of Vegan on the Cheap and I love it. My best Summer food is vegetable & Vegan sausage kabobs...I eat and make these a lot in the Summer especially with tofu in the scewers.

Thanks for the contest! I have lots of favorite summer foods. Potato salad, watermelon, corn on the cob, fresh fruit right from the tree, fresh peas right from the vine, fresh tomatoes right from the garden, mmm-mmm. Hope I win (fingers crossed)!
 
Watermelon automatically pops into my head when I hear (or read) about summer! It's so deliciously YUM.

Favorite summer foods, hands down: sun-warmed, homegrown cherry tomatoes, basil, and sweet corn -- tossed together with a little olive oil and vinegar, or just eaten straight from the garden. It's like eating sunshine.
 
Watermelon is my favorite summer food. I love eating it not just as a snack or a meal, but also seasoned with salt, pepper, olive oil and served with feta cheese and black olives is really wonderful!

We love grilled portobellos. I'm planning to try portobello fajitas this week. Yum!

Hmm.... I would say my ultimate favorite is a fresh peach eaten straight from the tree so it's still a bit warm and so juicy! Yum.
 
There are so many that it is hard to narrow it down to one. But I think I'd have to pick corn on the cob... or roasted vegan marshmallows... or all the melon... ugh! Let's go with corn o the cob! :)

I see I'm joining the chorus by praising fresh, home-grown tomatoes! We can't get enough (but sadly, Texas heat will soon curtail access to our own tomatoes).
 
My favorite food of summer are summer fruits: berries, cherries, melons, peaches, plums, nectarines...I never eat any of these out of season; so I gorge on them during the summer months.

I love fresh roasted corn. Off the grill or from the oven, it's great! (Especially when smeared with Earth Balance butter. Yum!)
 
dang, these favorite food comments are always the hardest... i think i look forward to strawberry season the most, followed by corn on the cob (but if i'm going to be honest, i just get so excited over fresh produce that just about every few days i'm over the moon about whatever is ready to be picked and eaten)!

Homegrown Sungold cherry tomatoes, roasted in a foil packet on the grill until the sugars start to carmelize. Once roasted, while they're hot, I smoosh them on top of a warm veggie burger in place of ketchup--sooooo good!

Ripe, red tomatoes from my dad's garden. I don't know how he does it, but his tomatoes are better than anyone else's, by far. Always best eaten out of hand like an apple.

A Persian salad with cucumbers, tomatoes, red onions and kalamata olives with a lemon juice/olive oil dressing--easy, fresh and delicious on a pita with hummus.

Tomatoes warm from the sun. they seem to be a favourite of a lot of people. a close second would be corn on the cob but I could eat the tomatoes at every meal and I often eat one as a snack.

Honesty - just one? I love summer for the bountiful produce we get in this area. Scrolling down to the end of the comments just provoked comments like: "Oooh - I need to make my gazpacho for tomorrow!" or "Time to break out the grill for corn on the cob - with fresh, homemade pesto." Add a nice side of fruit salad, and I'd be good to go! We're also blessed to have wonderful farmer's markets in the area.

i am currently loving beets right now, especially since i just learned how to prepare them without dying everything in my kitchen red!
 
I just can't pick one favorite... I love the early asparagus and arugula, the peas and string beans, Jersey tomatoes and sweet corn, and the abundance of squash. My favorite thing about it all is local organic veggies; I love this time of year.

The foods of summer are wonderful, it is difficult to pick one. Peaches in Chianti with a little cinnamon is lovely.

Anything that doesn't require an oven or stove :) Guacamole and salsa have been my dips of choice.
 
I make a cold, vegan pasta salad in the summer that is full of flavor, and full of healthy carbs, too. With whole grain, or gluten free pasta, sesame oil, rice vinegar, shredded scallions, salt & pepper and two kinds of sesame seeds! It travels to pot lucks well, the flavors are intense, and my vegan friends can eat it without worry! Yum, go my vegan friends!
 
Berries! I love berries, and look forward to when they come into season so I can eat them right off the plant...
