Spicy Corn Fritters with Corncob Jelly + A New Cookbook Contest!


If you follow me on Facebook, you may recall that a couple weeks ago I saw corn cob jelly for sale and had to buy a jar — I mean, who wouldn’t, right?  Of course, once I got the jar home I had to figure out what to do with it.  Enter:  Spicy Corn Fritters! 
I sometimes serve corn fritters with a little maple syrup, so I knew that corncob jelly would probably taste good, and I was right.  What really put these babies over the top, though, was adding a bit of heat to the fritter mixture.  I added some chipotle chili powder and a little cayenne, but you could also add minced chipotles in adobe or some other kind of chile.  As for the corncob jelly itself, well, the taste of corn is barely perceptible.  It’s a lot more fun just looking at the jar!

I have not had a chance to look at Fire and Spice cookbook however, the names of the recipes in it look very interesting.

I have come to love the spice - cumin lately. I also love, love, love sweet chili sauce on EVERYTHING.

My favorite spicy food is really a condiment and it is Tabasco sauce. I love it. I add a drop or two to so many different things to "up" the heat.
 
Sriracha! I would put that stuff on pretty much anything.
 
I love anything spicy! The main source of spice in my life, however, must be red pepper flakes. Those go in most savory foods. Mmmmm.
 
I LOVE any kind of Thai curry made with coconut milk. The creaminess really balances out the spice, and it's so delicious!

My husband is the real spice lover in our home, but this Summer I got really excited about homemade vegan jalapeno poppers, made with jalapenos I grew myself! I'm also quite taken with paprika - although the aforementioned husband recently pointed out that he thinks it is more for colour than taste...not sure if I believe him on that one.
 
My favorite spicy ingredient is aji amarill. its the key ingredient to a bunch of spicy Peruvian dish and I enjoy using it on the vegan versions of those dishes.
 
Love and and all spicy food! If I had to pick a favorite, I guess I'd go with vegetable Vindaloo (made vegan of course).

Cumin! I love it in salsa,skillet dishes, and chilis.
 
My favorite is probably cardamom och cinnamon. I love using them in food, and they can completely change the character of a dish.

This is my favorite spicy food. I've had it many times and it's always hot, spicy, fun and delicious. Here is the recipe that was given to me and it's great.
Dry-fried Green Beans

9 ozs. green beans
2 tablespoons ya cai
1 tablespoon fermented black beans (dou chi), rinsed and drained
5 dried chillies, halved and seeds discarded
1 teaspoon Sichuan pepper (huajiao)
3 cloves of garlic, thinly sliced, and the same amount of ginger, thinly sliced
3 spring onions, cut into 3cm lengths
50g minced pork (optional)
Cooking oil
Salt to taste

1. Top and tail the green beans, and cut into 2 inch lengths.
2. Heat your wok, and add about a tablespoon of cooking oil and once hot add the beans, stir-fry for a couple of minutes, and then add another 1-2 tablespoons of oil. Stir-fry for another 3-5 minutes, or until the beans are tender. Remove from the wok and set aside.
4. Add another tablespoon of oil to the wok, and once hot add the garlic and ginger slices. Stir-fry on a moderate heat for about 30 seconds, and then add the chilies and Sichuan pepper. Stir-fry for another 30 seconds, taking care not to burn the spices, and now add the ya cai and dou chi and stir-fry for another 30 seconds.
5. Finally, add the spring onions (and the pork, if using), and return the beans to the wok. Stir-fry for another minute or so, add salt to taste, remove to a serving dish and serve.
Of course leave out the pork. You can get the pickles and other Chinese ingredients at Oriental food stores or some good supermarkets. It's worth the effort because this humble little dish is great.
 
Only one? I love hot mango pickles. I eat Indian food sometimes just to have a base for it. I eat it by the spoonful, and sometimes add it to other types of dishes. Someday I have to come up with an amazing sandwich using it.
 
Oh, this is easy. My favorite spicy food/ingredient hands-down is sambal oelek!

It changes every so often, but lately my favorite spicy condiment is Chipotle in Adobo Sauce! Hot, smokey, and did I say HOT? :)
 
I love Thai curries of all kinds, but my favorite is probably green. I usually only eat that at restaurants since my boyfriend doesn't care for it, but we do frequently make panang and masaman curries at home and they're totally awesome (we're cheaters though, we use canned pastes). We recently made a red curry with sweet potatoes that was to die for.
 
Scotch Bonnets- but one time I try to sautee them and it was like setting off mace in the house! LOL! It took hours to air out the place! But they were good even though everyone was crying!

Kimchi! I have never found a spicy food that packs such a punch, but with such a complex and distinct taste!
 
One of my favorites is harrissa - a middle eastern spice with lots of red pepper flakes. I think I like red pepper flakes in just about anything, too... :)
 
Sriracha. Especially when mixed with rice vinegar, agave, ginger and sesame oil to make the best dressing for asian dishes.
 
My all time fav is vegan shrimp Mozambique

I just substitute tofu for shrimp, I press all the moisture out of the tofu.

It's all about the sauce, great for dunking bread

Robin I love spicy food but not with jalapenos. I use red crushed peppers, this spice gives my food that spicy taste without going overboard. I love burritos with a spicy taste. yummy!

Vivi’s Sizzlin’ Chipotle Carnival Mustard is one of my favorite spicy foods. It is a great condiment or you can make tuna or salmon salad with it, or just let your imagination flow.

My favorite spicy dish is the phal from Brick Lane Curry House. If you finish eating it they will give you a complimentary beer. Hot? Let's just say they don't like to give away free beer.
 
My favorite spice lately has been lemon pepper. I have been sprinkling it on all of my food. The lemon freshens up the meal while the pepper adds just enough heat. YUM!!!

My new favorite is Chana Masala. Hard to choose one Indian dish but for now, this is it for me.

There is just no way I can pick a favorite. I love so many different types of chiles and hot foods. As I am typing I am eating the Red Hot White Bean Chili from F & S. I love sweet chili soauce. I can add it to almost anything and usually use up to one big bottle each month
 
I'm a sucker for anything with the word "chipotle" in it! "Viva Vegan" has a recipe for sweet potato-chipotle bisque that is to die for! Would love to win Fire & Spice and eat spicy food all the time!
 
My favorite spicy ingredient is sriracha! I can eat it in/on anything. YUMMM!
 
My favorite spicy thing is my homemade hot sauce made with fresh, homegrown habaneros, serranos and jalapenos and garlic.
 
I am not really a spicy food person however my husband and daughter loveeeee spicy food! I would say one of our family favorite spicy things is chipotle pepper in adobe. The first time I tried it, I thought it was tooooo spicy. Now I leave them whole while the food cooks and then take it out and let them us it in their food and I just have a slight hint of the spiciness in my food.
 
I like either a nice, spicy salsa or a spicy Indian dish, like chana masala.

Preserved lemons! These are pricy and hard to find, but are used in small amounts and keep forever in the fridge. I was hooked when my son made this incredible stew for Christmas dinner last year in his tiny NYC apartment kitchen.

By the way - about that corncob jelly. The main ingredient is apple juice. The corncobs just add the pretty pink color rather than flavor.
 
My favorite spicy sauces are Sriracha and Wasabi! Especially combined on vegan sushi!

Although I love Thai green curry, hot salsa and wasabi with sushi, I would have to say that my favorite is good old chili that is made spicy from chipotles or cayenne pepper. Comfort food!
 
Horseradish! I have vivid memories of Sunday brunches at an upscale restaurant in my small hometown where my family would go to celebrate big events. One of the fixtures on their buffet was a platter of thinly sliced roast beef with the hottest horseradish I have ever eaten. My sister and I used to take large portions of it on our plates along with crackers, and then take turns eating larger and larger amounts of it until we couldn't stand it any more. That incredible sinus-clearing rush you get when it hits...the biggest food-induced adrenaline rush imaginable!!
 
I love the combination of cayenne and cumin, especially in bean dishes.
 
I love the gamut of Indian spices--starting with black mustard seeds toasted in hot oil till they pop.
 
Without a doubt... Pico de Gallo!
