My husband Jon write the survival guide section (a must-have for whenever the power goes out -- we lived through a few hurricanes, so I know) and I wrote the 80 recipes, all of which can be made using only pantry ingredients and can be ready in less than 15 minutes. The best part of these recipes is their versatility: if you have fresh or frozen ingredients, you can use them, but if you only have canned or dehydrated ingredients, these recipes can be invaluable.
Many of these recipes, such as the Samosadillas shown above, as well as the Almost-Instant Black Bean Chili and Puttanesca in a Pinch are regulars in my house. Here’s another favorite — Moroccan-Spiced Vegetable Stew:

That sounds like a neat cookbook. My favourite pantry ingredient are dried beans and canned beans, in a pinch. Most of my beans revolve around them!

ReplyDeleteChickpeas! I made your vegetable soup with quinoa yesterday and used crushed fire roasted tomatoes instead of diced (i picked up the wrong thing at the grocery store) and it still turned out great!
ReplyDeleteMy Favorite Pantry Ingredient is Chickpeas!! I go through several cans a week! If electricity goes out, all I need are the ingredients to make hummus and hope that there are some pita chips in the closet, and I'll be happy and satisfied for days!

Perfect for making home made salsa (for some odd reason I can't cut them to be the perfect salsa consistency), making baigan bharta, or channa masala. Also useful for practically every single dish I make =)

ReplyDeleteOur favorite item in the pantry is Nutella. We go through the family size so quickly, however the family size Nutella jar holds a bag of dried beans so we upcycle them as containers. I probably shouldn't admit publicly how much Nutella we eat. we also have canned beans in stock. :)

ReplyDeleteOh, what a tough question! I guess if I can only pick one, it will be kalamata olives. I always have a jar on hand and I've added them to just about everything!!! I added some to the 'Sundried Tomato & Spinach Quesadillas' from Robin's 'Quick Fix Vegetarian' cookbook along with a touch of garlic powder. I serve them with guacamole for dipping. My husband says these are his favorite quesadillas ever....and he's an omnivore. Pantry ingredients promote creativity in the kitchen!!! ---Tara

doh! Nutella is not vegan. my favorite vegan pantry staple would either be King Arthur whole wheat flour or tetrapaks of almond milk.....can't give up Nutella so I hope everyone forgives me for that.

ReplyDeleteMy favorite pantry ingredient is TVP. This stuff is cheap, lightweight so it can go on any trip, camping, backpacking and it comes in a number of forms like chunk and ground. It also is the basis for Butler soy curls. I love that I can have ground "beef" or Chicken" or chunks for stew or pot pie in minutes on a hard day with no defrosting, no taking up fridge or freezer space. It is the greatest ting since sliced bread!
