Fresh from the Vegan Slow Cooker

I absolutely LOVE the cover of my soon-to-be-published slow cooker cookbook! Isn't it gorgeous?  That's the Seitan Ropa Vieja on the cover. This new book is due to be released in early October, but is available for pre-order now on Amazon.

I've already posted a few tester photos here, but I thought you might like to see a few more. So, here is another sampling of the recipes that await you in Fresh from the Vegan Slow Cooker, photos taken during testing by a few of my fabulous recipe testers Sabrina, Lori, Lea, and VeganAide:

Maple Dijon Root Vegetables

Seitan Fajitas

Creamy Polenta with Mushroom Ragu

Seitan Posole
Chocolate Truffle Cake

So what do you think? Ready to get out your slow cooker and start cooking?

  1. Yum! Gorgeous! Will there be wheat & soy free recipes as well? I love how your other books have a variety - we can't have wheat, soy, & nuts to name a few.

  9. Just when I said I had sufficient plant based cookbooks. This looks too good to pass up. Since history is the best predictor, I know this will be another of your winners. Thanks!

  14. OMG. I am IN LOVE with The INdian Slow Cooker book & can't wait for your book to come out! Can you used dried beans?? That is what I love about the Indian one, is that it is all one step, basically. Love throwing a few things in and pushing a button. So happy that more Vegan Slow Cooker stuff is coming out, as it seems typically they are used for meats & the nasties! The cake looks amazing.

  15. Such a great looking cover, Robin! Very hearty looking dish with great colors, sure to catch eyes in any book store or when browsing Amazon. Now all I need is a slow cooker...

  16. Thanks, GS, GV: I have a few recipes for basic beans and also a few that start with dried beans, but I personally prefer to cook a big batch of beans from scratch and then portion them out to use in recipes. More digestible that way, and also some ingredients would get way overcooked if put in to cook w/dried beans.
