Vegan on the Cheap Tester Photos... and a Question

Here’s the final installment of my favorite tester photos for Vegan on the Cheap. These lovely pics were taken by Tami at Vegan Appetite. That's Quick LoMein in the top photo.

Now to my question. I’d like to share another recipe from Vegan on the Cheap and I can’t decide which one. So I’ll leave it to you to tell me.

What kind of recipe would you like to see posted next? A soup or salad? Maybe a skillet dish, sandwich, or pasta recipe? Something for the slow cooker or oven? A dessert?

Be as general or specific as you like — for example, you can ask for the recipe for one of the tester photos I’ve been posting these last few weeks. Whichever recipe (or type of recipe) gets the most votes will appear in a post by the end of next week.

P.S. If you already have the book, you can "play" too -- list your favorite recipe so far or pick one that you think others would enjoy.

I'm excited to have found this blog. I bought vegan Fire and Spice yesterday, after wanting to buy it for the past half a year (long story, but I've been broke). I made Pasta Puttanesca and the Bean and Rice Salad with Cumin Vinagrette. YUM!!!!!!! So glad I got that book!

We live in the North, and it is still so cold here... it actually snowed this morning! I would love to see a soup recipe that could warm us up but that doesn't feel like winter.

I just want to say how wonderful your cookbooks are, and thank you for opening up a new world of amazing cookery to me!

I have three of your cookbooks: 1000 Vegan Recipes, Vegan Fire and Spice, and have just received Fresh from the Vegetarian Slow Cooker. They are all full of delicious and fantastically creative dishes, and I think 1000 Vegan Recipes was a big part of what inspired me to go Vegan. :)
I have 4 of your cookbooks and enjoy them. Just got Vegan on the Cheap but was wondering how important the oil is in most of the recipes? Can they be done with leaving it out?
Hi Nancy, You can use as much or as little oil in the recipes as you like. You can simply use less oil, use a cooking spray, or saute in water or broth. If there are particular recipes you have questions about, feel free to e-mail me.

Hi Robin, last night I made the sweet lentil chili from your slow cooker book, but I only had green lentils, not brown. Do you think this is why the lentils were not as soft as expected? I don't know much about the different types of lentils...
Hi Kate,

Yes, the different varieties of lentils all have different cooking times. The reddish orange lentils cook most quickly (and can be very soft when cooked) and the green and black varieties take longest to cook (and are the firmest ones when cooked). The brown lentils are right in the middle and when cooked can range from soft to firm, depending on how long you cook them.

When substituting green lentils for brown lentils, plan on the cooking time taking a bit longer. You may also need to add a bit more liquid to compensate.
